old friends and a raspberry cake…

Some friends from London have made a last minute trip to the farm – here is an adapted version of a Pear and Blueberry cake by Nigel Slater to herald their arrival….

 

130g unsalted butter
130g caster sugar
2 large free-range eggs
130g of plain flour
1 tsp of baking powder
300g of raspberries

Set the oven at 180 degrees
Line a 21cm square tin (I used a larger round tin as couldn’t seem to find a smaller one – it still works well only you have a slightly thinner cake.)

Beat the sugar and butter until light, pale and fluffy. Whisk the eggs and slowly add to the creamed butter and sugar. Sift in the flour and baking powder and fold gently into the mixture. Pour the mixture into the tin and sprinkle the top with berries. Bake for roughly 55 minutes or until a skewer comes out clean. Rest, turn-out, eat and drink with a pot of tea.
